Paging Professor Crater.

Did anyone's mother ever tell you why we use iodized salt on our food instead of the other? My mother, who was born in the 1920's, discussed it with me when I was a teenager. She made it sound very important, and so I never forgot. And, I told both of my daughters about the necessity for iodine in salt.

However, I don't remember being taught about iodized salt in health class. And, I'm quite certain it's not being taught in school today. Case in point:

Young woman in the baking aisle at a grocery store: I don't want no iodine in my salt. That be ignurnt.
Me: Go for it! It is tripping.
Young woman: Yer stoopit, bee-yatch!

Anyway, in case anyone is still wondering, it's a major factor in preventing mental retardation. The Salt Institute has a very good article on the subject, including efforts to eliminate iodine deficiency on a global scale.
